Abstract
On the thriving brewing market, we observe a growing interest in new ingredients used in craft beers' production. This market provides opportunities for the innovative use of herb honey to combine its taste qualities with home-made beers. The subject matter of herb honey in the food production process is not widespread. It is a result of ignorance about their positive influence on our health. The public awareness about the benefits of using herb honey in the production of beer is even lower. This work aimed to present the production stages and evaluate a new product in beer with herb honey. The evaluation team, consisting of 22 people, indicated the beers with selected herb honey as tastier than the craft beer American Pale Ale "Native American". Therefore, the herb honey can be successfully spread in the brewing industry. Moreover, their taste can enrich craft beers available on the market and broaden the assortment of sellers.
